Yummy Blueberry & Sultana Oat Cookies

I literally love these cookies! They’re super quick and easy to make and packed full of great ingredients to help boost you throughout your day.

So whether it be an-on-the-go breakfast, elevenses or an afternoon snack, these little circles of goodness will help power you through from AM to PM.

They’re made up of comforting oats, juicy blueberries and sweet sultanas with healthy fats from coconut oil, protein from eggs and uplifting ginger. These cookies only take 20 minutes to make, so they’re a great recipe to whip up when hunger strikes, or for unexpected guests!

Makes 7 cookies


- 1/2 cup blueberries 
- 1 cup oats
- 2 tbsp buckwheat flour
- 1/2 cup sultanas 
- 1tbsp cononut oil 
- 2 eggs
- 3 tbsp coconut milk
- 1tsp baking powder
- 1tsp fresh ginger (shredded)
- Salt


1. Preheat the oven to 180°C (356°F)
2. Place the oats in a mixing bowl along with 2 tablespoons of buckwheat flour and 1 tablespoon of baking powder. Mix until combined.
3.  Melt the coconut oil and leave to cool. Once cooled to room temperature, add the oil to a mix of both the eggs and coconut milk and beat with a fork until thoroughly mixed. 
4. Add the blueberries, sultanas and grated ginger to the oats before adding the liquid mix of the eggs, milk and oil. Stir until totally mixed.
5. Use your hands to shape the mix into 7 cookies. Place on a baking tray and cook for 15 minutes, until the surface is golden and the texture is crumbly. Enjoy with a cuppa!
