Super Easy, Shredded Carrot Salad

Don’t be fooled by this recipe; it is not bland and tasteless as you may imagine, but instead a tasty, nourishing and fresh side to any dish. I create it ahead of the week so I can have it at easy access for brunches, lunches and dinners, plus, storing it only makes it marinade even further, so it’s super tasty as the week goes on!


- 500g carrots
- 1tbsp tahini
- 1 lemon
- 1 cup sultanas
- 1 tsp cinnamon
- 1 handful fresh coriander
- rock salt
- black pepper

1. Wash, top and tail the carrots before grating them
2. Mix a heaped tablespoon of tahini, the juice of the lemon, the cinnamon, a sprinkling of salt, a generous amount of black pepper and mix to form the dressing
3. Add the dressing to the carrots and add in the sultanas, mix well so that every inch of it is well-flavoured
4. Finish with a handful of fresh coriander
