Indulgent Chocolate Brownies (Healthy, Plant-Based)

IMG_3347.JPGIMG_3346.JPGIMG_3349.JPGIMG_3348.JPGThese are definitely a healthy take on a brownie, but they are still super sweet from the coconut sugar and medjool dates. I highly recommend this one if you’re looking for something decadent yet super healthy!


- 100g medjool dates soaked
- 1 aubergine steamed 
- Salt
- 3 heaped tbsp cacao powder blend
- 100g ground almonds
- 4 tbsp coconut flour
- 2 eggs 
- 3 tbsp coconut sugar
- 1 tsp baking powder

1. Preheat the oven to 180C (350F)
2. Cut the aubergine into chunks and add to a saucepan, leave to boil for 10 minutes (until super soft!) 
3. De-pit the medjool dates and add them to a bowl with a small covering of boiled water, mash them with a spoon until they're a soft and smooth mix
4. Mix the ground almonds, coconut flour, coconut sugar, baking powder and salt together
5. Add the chocolate mix to the dry mix along with 2 beaten eggs and beat the entire mix together
6. Grate the zest of an orange and place in the oven for a good 20-25 minutes, until theyre cooked through fully
7. Leave to rest for 30 minutes before slicing, as this will help them hold together
